When I first heard about it I grimaced. What a gross idea.

Then my wife made it.
It was like a miracle come true.
Something fairly healthy, that amounted to a comfort food.
No guilt, and not too filling.
Earth friendly, with beans, rice and just a sprinkle of parmesan cheese.
